Betty’s Baked Good Prize and Gran’s Eats for the Week!

Hey Gang! Happy ‘most freezing cold week of LIFE”

Monday/Today were MINUS 40!!!?@!#$@$#%#&^*^$# aka “THE WORST”
Greg battened down the hatches, got a fire going, sealed off the upstairs with sheets and brought down 2 duvets. We have been sleeping downstairs on the couch ever since. It is quite cosy and I wasn’t feeling too well Monday so it was great to cosy up with some dry wood heat and rest up.

Today I whipped up some of Angela’s Raw No Bake Peanut Butter Chocolate Rice Crisp Balls

Tonight I had Fish n’ Chips:

4oz of Haddock breaded with toasted whole wheat breadcrumbs and an egg white and paprika, served over my favorite sweet potato and carrot fries. This all comes in at around 350 cals for Fish and Chips. Heck Yes!

While the fish and the fries were in the oven I whipped up lunch for the next LONG while.

Turkey Chili with Ch-ch-ch-chia!

Chock full of ground turkey, 1 tbs of olive oil garlic, onion, pepper, carrot, 1 can of diced tomato, 1 can of black beans, 1 can of red kidney beans, 1 tbs of chia seeds, coriander, cumin, paprika, cajun spice and salt n pepper.

Brown the turkey, garlic, olive oil and onion first then add the carrot and peppers. Stir lots for the first 5 mins and then add the rest of the ingredients and put on low for about half an hour.

It made SIX 1.5 cup servings. I put two in the fridge and the rest in the freezer for later lunches!!

I had a blast in Halifax and I LOVE my friends! My face hurt from laughing so hard all weekend!
